Ingredients
(Quantity for 6 cookies)
- Butter 130 g
- Sugar: White Sugar 40 g + Brown Sugar 40g
- Cake Flour 70 g
- All purpose flour 150 g
- Salt 1.5 g
- Baking Soda : 1g
- Baking Powder: 2 g
- Eggs : 2 eggs (small size) = 80 g
- Chopped Walnuts : 80 g
- Matcha: Use 10 g for a slight green color or 15 g for a dark green color.
Instructions:
① Lightly beat room temp butter.
② Add white/brown sugar and mix.
③ Add room temp eggs gradually.
④ Add the dry ingredients (cake flour/all purpose flour/salt/baking soda/baking powder) and mix.
⑤ Just before the dry ingredients are fully mixed, add the chopped walnuts and white chocolate. Mix well and refrigerate for 30 minutes.
⑥ Combine all ingredients into a single dough and portion out approximately 100 g each using a scoop.
⑦ Bake for 17 mins at 180℃ (pre-heat oven to 180℃). Adjust the baking time (shorter/longer) to achieve the perfect texture – crisp outside, soft inside.
